I've been to tons of potlucks and never been sick from eating whatever is there. Then again, I do have a strong stomach.

Potlucks have been around forever and I have never been sick from whatever I have eaten there either. My goodness, when I have to get that paranoid I guess it's time to put me in a nice secure hospital!

There are a lot of them out here at churches and there have been articles about people becoming ill from them as food wasn't thoroughly cooked, unclean prep. It can happen even at restaurants.

The only time I ever got sick was an outdoor event when the slaw was uncovered and out in the warm air for a while. Spent the evening in the can, which was ok because I got to read most of a good book.
My advice is that if there is a rainbow sheen on it, avoid it.

Good grief.
I've only gotten sick once, from bad fish - at a Red Lobster. And I 've been to literally hundreds of potluck suppers, and tried everything. I like to taste other people's home cooking for a change!
If you're that paranoid, stay home - or show up and don't eat, and don't make a big deal out of it just to get attention. Geez, I couldn't even call someone like that a friend - if they're that afraid of 'what might happen' then they are probably hiding under their bed, in their spotlessly clean house, hunting dust bunnies with a .22. Don't shoot! - it's probably your foot.
"What might happen" is that you could get a recipe that no one else in your family has, or you could make a few new friends, or you could experience a whole new world of taste bud enlightenment.
Oh, yeah, I'll still eat at Red Lobster.
