I made them the first night of Hanukkah (I married a Jewish guy, and also became adept at making kugel and other Jewish foods, but don't ask me about my attempt at gefilte fish.)
I love latkes but can't stand how the house smells the morning after.
Fortunately we've had nice weather and I was able to air the place out.

How the house smells?

Latkes are made from potatoes, onions, eggs, matzo meal, and cooked in vegetable oil. How can that smell bad?

I don't use Matzo Meal..... hmmmm.....LOTS of grated potatoes...a little flour... egg... salt... pepper... I THINK some milk.... hmmmm... gotta double check my recipe... but not Matzo Meal.....but I have never used bacon fat

Me too! It was my first time. I made them for 15 people, so that got pretty old. They were good though. The house did smell fairly strongly of oil afterwards.

My recipe had potato, a little onion and parlsey, and eggs. I think a little matzo meal would have been a good idea though, my potatoes were too wet even though I drained them as well as I could and squeezed them with a towel.

I don't really have a written recipe, but my ingredients go something like this:

7 or 8 peeled potatoes

1 medium onion

Grate the above, then mix together with:

2 or 3 beaten eggs

handful of either matzoh meal *or* flour

Grate with food processor (or by hand with grater).
Drop by tablespoonful into hot oil (I use about a half-inch of canola.)
You have to use plenty of oil to get a crispy pancake.
Drain on paper towels, can keep the first batch warm in a low oven while cooking the second batch.
Not sure how many this makes---maybe 10 or 12?
Season with salt and pepper, serve with applesauce and/or sour cream.
No ketchup allowed!

I think it's the combo of onion and vegetable oil that gets to me.
I used to work in a large Jewish preschool.
Latkes are great, but when you have several classrooms cooking, ugh.
By the end of Hanukkah, I would have enough of that smell.
It gets in your hair, your clothes...
