My favorite way to cook them is to first saute some nice smoky bacon til crisp and then add sliced sprouts (cut fairly thinly). Quickly saute them for just a minute or two and then add a few drops of balsamic vinegar. divine!!
While many turn up their noses to brussel sprouts...I had a few younger children at my home right around dinner time...I stretched out my meal with a few more veggies and invited the kids....to my surprise...they all tried and loved brussel sprouts...over the canned corn!
The sliced brussel sprouts sound yummy!! I've always just par-boiled and added butter.
I peel off the outer leaves if they are too pale or brown, cut a bit more off of the base and steam until tender but tender. You can do this in a microwave oven. Then I serve with a little butter and shreds of Parmesan cheese. You can also stir steamed ones into a cream sauce made with lower fat ingredients...add a pinch of nutmeg to a medium white sauce made with cornstarch...substitute some chicken broth for some of the milk if desired.
We cut a cross in the base of the sprout before cooking; lets the heat into the center and reduces the time needed to cook them.
Our favorite way of cooking them is to parboil them to tenderness, then when they are close to done, saute an onion and some garlic in a little olive oil, add some balsamic vinegar and let the result simmer for a bit. Drain the sprouts and dump 'em in with the onions/garlic/balsamic mixture, and toss it all around for a bit. Wonderful stuff.
It's better to steam them. That brings out more flavor. No butter is really needed, but you can always season them with a little Mrs Dash.
