Oh, there are a lot of memories in this post. Love gravy on my fries, but they have to be "home made" style fries. Vinegar on fries is good, too. I picked that one up in Canada.
My grandmother was part French Canadian and we used to have what she called (phonetic spelling here) boo-dan (I think it's boudain). I loved it till I found out it was blood pudding, made from pig's blood.
Someone mentioned ketchup mixed with mayo. That was our grade school cafeteria lady's version of Russian dressing, and that's how I got hooked on it on top of mac & cheese. She accidentally poured it on my macaroni instead of my salad one day. I've loved it ever since.

lol, nomore, got a chuckle from your post, boudin(blood sausage) is an old time french favorite, as is "creton" its a pork spread for crackers and bread, and lets not forget tripe, pickled cow gut.
nomore, i use to be a meat dept. manager in a large supermarket, many of my customers were french, hollaring,,where's your boudinnnnnnnnn!!!??
...and we have the People Who Put Catsup on Their Eggs, and People Who Can't Stand Catsup on Their Eggs.
I belong to group (b). My girlfriend belongs to group (a). It just kills me when I make a beautiful omelette...one of my specialties...and she glops that CRAP on it.
I will put salsa in an omelette. The only things I put catsup on are hamburgers and fries.

Well, maineman, you may have met Granny! We didn't do tripe, but she was big into head cheese. Those old French Canadians didn't waste anything. Not a bad way to be.
so true, didnt waste a thing, even today, i travel way up in northern maine,,,meet many french-canadiens mainers....lol
