Wow! Great post Jenny! All I could think of was dried beans with a little added smoked ham hock, and some fried cornbread (cornmeal, water, diced onion) fried on top of the stove in little grease. And actually, my husband would rather have this most of the time, LOL - just add a few collards and he would be in heaven - I think this would be under 3.00?
Also, rice! Rice and cheese; Rice and black or red beans with a little salsa thrown on top;
Boiled macaroni noodles with some shredded cheese and a can of chicken or tuna and a small can of cream of something soup. Eaten alone or with a little lettuce leaves.
I have two contributions that will be around $3.00 to make, but yield more like 2-3 servings. I suppose you could get 4 small servings out of these recipes if you only needed a light meal.
1) Drizzle a pan with olive oil and heat it to medium. Mince some garlic and place it in the hot oil to fry for about a minute or two. Add a small tin of anchovies and stir them until they "melt." Finally, add a pinch or two of hot red pepper flakes. Boil some pasta and top the pasta with this sauce.
2) Caramelize onions in a large pan with cinammon, paprika, and a little bit of either olive oil or butter. Next, add some small pieces of potato. Cover this with chicken stock and add salt and pepper. Let sit for about 20 minutes before adding some rice. Simmer on low-medium heat until the rice is fully cooked and the vegetables and rice have absorbed all of the chicken stock.
