That has been my favorite comfort food since childhood. I don't dunk, though.

My ultimate GCS: Sourdough, thick slices of extra sharp Tillamook or California cheddar, crisp bacon or a slice of pan-fried ham.... or what the hell... both, and a slice of sweet onion.

Grill in the pan until dark brown and the cheese is oozing out.

Mostly when I make a grilled cheese sandwich, it's just whole wheat bread, buttered on the outside so it'll grill up to a nice crust, with a thick slice of good sharp cheddar. I like to grill it on a low flame, so that the heat gradually melts the cheese at the same time it's creating that lovely buttery crunchy outside. And my very favorite accompaniment, like so many other folks here, is a mug of tomato soup. That takes me right back to my mom's kitchen when I was about 8 years old.

One thing we've done occasionally is to include some ham in the sandwich, the shaved ham that you get at a good deli. That adds a completely different note. And one of our favorite restaurants serves a grilled cheese sandwich with applewood-smoked bacon that is To Die For; they slather on some pesto along with the bacon and cheese, and it is unbelievably good.

But when I want pure comfort food, there is absolutely nothing better than a grilled cheese sandwich and a mug of tomato soup.

That is GREAT!

I like to make mine on the George Foreman grill... no butter or anything just dry bread and cheese.... then dip it in creamy tomato soup.

Did your parents dunk? I think a lot of us do what we saw our parents do.

For instance, my father was from Brooklyn and his mom made lots of really good food but it was not what my mother (native Texan) was used to. So, I generally followed my father's lead with grilled cheese. I also ate a lot of fried bologna (which he cooked) and scrambled eggs with ketsup. People are also surprised when I ask for pumpernickle bread and rat cheese with saurkraut.

Wow, now I am really getting hungry.

Also try a slice of red onion. And back to BLT-nothing like a BLT w/cheese and onion.
