My pho place has pho with either rice noodles (shaped like spaghetti) or flat noodles. The diff in taste and color is very small. What do you call the flat noodles?

What are the right terms for the two noodles? "Rice" is a food, not a shape. Hence the flat noodles might be made out of rice. Sometimes "vermicelli" might be right.

My waiter said the default for beef pho is rice noodles. The default for chicken pho is flat noodles.

I think banh pho. But rice noodles is acceptable, and we call them glass noodles.

Glass noodles are made of bean starch. The thin rice noodles are white.

At the pho restaurants we visit, we usually just tell them we want the flat or round rice noodles in our pho.
Some places have the glass or egg noodles available.

Pho is usually rice noodles and the thin ones are vermicelli made of beans and are very healthy lower carbs than wheat noodles. Then there are the rice wrappers used to make spring rolls those are basically same as pho except large sheets.

Pho, soupy or dry, is traditionally served with wide, flat, noodles named " BÁNH PHỞ ". You can also use similar noodles used for pad thai, which are also flat rice noodles.

Thin, round, rice vermicelli noodles, named "bún" are traditionally used for cold, noodle salad dishes such as Bún Thịt Nướng," a popular version topped with grilled pork/beef/chicken, and sometimes a cut egg roll and grilled shrimp for the deluxe version.

The thicker, round, rice noodles, also named bún, ( but labeled on the packet for use for Bún Bò Huế) are used for the spicy Huế specialty soup, Bún Bò Huế.


I've never seen the round rice vermicelli noodles used for pho.
