Default Favorite cheese for grilled cheese

What do think makes a real grilled cheese sandwich? Do you think a good aged cheese works, or should it be Velveeta, or something in between?

While I am a Velveeta addict for melting on veggies...I love pepper jack for grilled cheese. Even better with a thin slice of ham or Spanish pork or both...and a dill pickle.

A good Emmental is definitely my favourite. Melts beautifully, has a slightly nutty flavour and goes nice and brown too.

Didn't vote because my favorite is this:

deli sliced cheddar, sliced tomato, deli sliced swiss on other side.

Or just swiss and tomato as a second choice.

Third choice I lived on freshman year.. Cheddar and avocado slices. Gotta have the cheese mostly melted before you put the avocado in.

There should be a pickle spear next to any of the above!
