wow, you guys have given me some great ideas. You just don't know how much I appreciate it. I do not make a lot of sweets, as we usually eat a lot of fresh fruit for our desserts yet when company comes, I do like to try something a bit more desserty!

The same sort of thing works with canned peaches too.

Mixed berry compote. Use at least two kinds of berries (think bagged frozen) at least one of them red like raspberries/strawberries, sweeten to taste, maybe add some liqueur. It can be served chilled, room temp or warm, over ice cream or cake with a little whipped cream.

If the sauce is too thin for your liking, you can boil it down for a few minutes or warm it up and thicken with a little cornstarch or arrowroot.

It is this. It takes about 5 mins to make, and everyone loves it. Just pop it into the oven while you are eating dinner.

APPLE WRAPS

2 pkgs crescent rolls (8@)
2 Granny Smith apples
1 12 oz can Mountain Dew
1 1/4 cup sugar
1/2 stick butter or margerine, melted
1 t. cinnamon

Mix together the sugar, butter and cinnamon-set aside
Peel, core and cut each apple into 8 wedges
Roll 1 apple wedge into each crescent roll and line up in 2 rows in a 13x9 pan
Sprinkle sugar mixture over
Pour over the Mountain Dew

Bake 50 mins in a 350 degree oven. Serve warm- with ice cream if you want.

I always have chocolate pudding mix on hand and usually have Cool Whip in the freezer, so my in-a-pinch dessert is often chocolate mousse.

any kind of cobbler is easy and really tasty. We are not huge dessert eaters so I have a couple of standbyes but that is all. One, I always keep a couple of graham cracker pies shells in the pantry. I can quickly fill them with lemon pudding mix or ice cream, jello and strawberries. Both are great quick fix desserts.

you know I still haven't watched pioneer woman and I mean to every Saturday. Maybe I will put that on my calendar for this coming Sat.

I think she's a lot better writer than she is a TV star. She seems uncomfortable on camera.
