Default Preparing Cannoli ahead of time?!

Has anyone ever made Cannoli? I bought the shells already and I was looking at recipes for the filling but they all say that you cannot make this ahead of time because it will make the shells soggy! I am making them for my daughter's 3rd grade class at school so I need to make them ahead of time! Can I make them the day before and freeze them? I will take them to school at 8:30am and they will eat them at about 11:30am. Thanks for any advice!

Pam-can they be refrigerated at school? It's cheese and won't hold up w/o refrigeration.

Anyway you could make them around 10 or later and bring them in? They will get soggy.

Use chocolate/white chocolate coating on the inside. Pipe it in, swirl it to cover, and then put them on a baking rack to let the excess run off and let the coating harden before you fill them. That will buy you enough time so that they won't get soggy.

Pam here is an idea... I know it alot of work but this is how we do it at my work. The cannoli cream is put into portion cups with lids and refrigerated. (one portion cup = one cannoli). This is important like Lacey said. The shells you can bring seperatly. Help serve in class. It really depends on how many kids there are ... Just an idea Alot of work.... Good luck!

Default Turned out well!

Just wanted to thank you all for your suggestions! I ordered large cannoli shells off the internet (Adriana brand) and I made a practice batch. My youngest children were sleeping so didn't eat theirs until 4 hours later--the cannoli's were fine and not soggy (Kept them in the fridge) I made them for the class at 9:00am and they were eaten at 11:30 and they were a hit! Except for the kids who figured out that there was a " healthy" ingredient in them (ricotta cheese!) oh well. My kids just think it's " cream "! LOL Just wanted to give you a follow-up!
