I love pressed Japanese pickled veggies (tsukemono). There are recipes out there but there is a mix you can buy at the Asian markets. I use sliced zucchini, cucumbers and carrots. Yum-o.

When I get a can of pickled jalapenos there never seems to be enough of the sliced hot carrots in there for me. I buy a few carrots, peel and slice them, then boil them for 2 minutes, (somewhere between crispy and cooked or as you like them). After draining I then put them in a large Tupperware container along with the can of jalapenos and all of the pickle juice they come packed in. After a few days they get nice and hot and adopt the pepper flavors.

I remember when pickled pigs feet were popular....I never tried or wanted to. I just remember hitting a jar and knocking it off the shelf while mopping and it busted and that it came out of my pay check...

I believe they were stained pink (regular chicken eggs) by the brine in which they were kept. Long ago, in the h*nky tonk bar I used to visit, there was a very large jar, one each, of pickled eggs, pigs feet, and hot red sausages. The egg brine was pink.

recycled the pickled beet juice, perhaps? I've done that before. recycled the dill pickle juice in the same manner.....
