Think I'm going to get a bowl of clam chowdah tonight from the restaurant at the top of the campground and enjoy some brie w/ a baguette... probably some grapes or an apple too...

Lazy Goulash. Brown ground beef (or turkey), diced onions and garlic with a little Lowry's garlic salt, drain. Add a can of extra sweet corn or frozen mixed veggies, McCormick's brown gravy and heavy whipping cream. Let simmer till the veggies are done. Pour over egg noodles and plan to be at the gym an extra 30 minutes tomorrow.

Soooo bad for you, but so good.

That is so funny! I made a shpherds pie yesterday - but used rotisserie chicken instead! I had all those left over mashed potatoes - they were kinda stiff - so I mixed in about 3/4 cup Parmesan, and some chicken broth and some shredded cheddar cheese. Deboned the chicken, added a large can cream of chicken soup, 2 cans drained whole kernal corn, 1 can Ro-Tel tomatoes. Mixed well and poured into large pyrex. Sprinkled on some pepper, celery salt, and a tiny bit of garlic powder. Spread the mashed potatoes over that.

WAS going to bake at 350 for about 30 minutes uncovered, but when I came inside from talking on the phone w/ Mom, DH had opened himself up a can of soup and heated that with some leftover cornbread. Now, keep in mind my casserole is sitting ON TOP OF THE COUNTER waiting to go into the oven. DH actually had to MOVE it out of his way.

SO, tonight we will be having chicken shepherds pie. I will just bake it, and then throw some more cheese on top!

Went to the mall with the girls... had to get the shoes and jewelry for the rehearsal/wedding tomorrow and Friday. They were so great and so helpful while we were there! I think they are actually learning to enjoy shopping. Took them out for Chinese and we had so much left over that we have Sesame Chicken and Egg Rolls for Dinner tonight! No cooking for me... comes in handy as they have Karate tonight.... BTW they are getting their GREEN belts tonight... it is a big deal! The next belt is the adult level we are very proud of them!!!!! OK... back to the busy life... hope you all are having a great week and I will have to catch up at a later date.....

SKBS-how do you squeeze so much into one day? Guess I was young once.

Congrats to Diva and CB.

Just scrambled eggs w/cheese, toast, fruit for dinner. Hopefully he graduates to pasta before I croak.
