Making a Wheat Wrap stuffed full of lightly sautéed sliced onions, sliced yellow squash, sliced zucchini, shredded broccoli, shredded carrots, & shredded red cabbage! I'll use grape seed oil to sauté the veggies & will add some flax seed, black sesame seeds, pumpkin seeds & pine kernels to the mix. Once its all done, no sauce needed, just add to the wrap, fold and gobble up!

It is so bloody hot in Atlanta! But I hear the rumblings of a thunder storm so we will get some much needed rain

I have been battling an online company to get the doggie his medication. We paid for it over a month ago and only got half the shipment. Either the supervisor is super busy or I am getting the run around. I have already placed a complaint with the Better Business Bureau and will issue a dispute if I get no resolution by Monday.

I have some chicken in a brine and will do a baked fried chicken with some fresh corn on the cob tonight.

HawaiiL-I know my grands are not happy campers-weather like you've had=no pool time for them. Looks like 3 to 4 days out there. When we lived in NJ never remember a spring like that. Keep warm and dry and think you could be here in winter-OH NO!!!

I think the old California girl is in me whether I like it or not as far as temperatures go. Very spoiled living there my whole life I guess. This humid heat is for the birds/bugs/whatever but not me!! Now I wonder why I was having such a bad time with the cold here! Ha! I am sooooooooooooooooo tired of sitting in the house with the good old a/c going non-stop!! DH is out on the riding mower---I think he is crazy personally!!
I am making good and simple macaroni and cheese, homemade, and having a variety of sliced melons to go with it for dinner tonight. Cool, light and easy.....
Jasmine rice is great!!!

Okay Pineapple Salsa Cyn-
4 cups cubed pineapple (1 whole=4 cups)
1 red pepper diced
2 scallions
2 T brown sugar
1 1/2 tsp Kosher salt
1/2 tsp dry mustard
6 dashes Tabasco (or more)
1/2 c lemon juice
2 T lemon zest
pinch ground cloves

Nix and refrigerate-always better next day.

Cyn - my mom used to make a 7 layer salad that was out of this world. Layers of lettuce, cauliflower, peas, bacon, mayo etc...in a glass trifle dish so you can see the pretty layers.

ALSO - you could make a "watergate salad" which is also something Mom made that was very good - has pistachio pudding in it and pecans!

Both of these are very good, and VERY easy!
