I do, but I give them a coarse peel, so there are still bits of the skin left-very 'rustic'.

I don't really like potatoes and don't eat them by choice. Certain forms of fried potatoes are okay, such as fries or potato chips, but fries are a delivery vehicle for ketchup, and chips are a delivery vehicle for dip.

I don't peel them because a good deal of the nutrition in a potato is near the peel. Plus, tastes better, especially in mashed potatoes.

Wait. I do, usually but not always, peel them when making vichysoisse.

I love to leave the skin on... but it depends what I'm serving as whether I do or not.

Gue... there's no pesticides applied to the potatoes... they grow under the ground...

The vitamins and nutrients are mostly in the skin... nothin' like the yummy skin of a baked potato slathered with butter, salt and pepper... sometimes sour cream added too... omg... now I want some for dinner!

Depends on what kind of potato it is and what I'm using it for. I don't peel baked or red potatoes ever.
