I tell him they are zucchini pancakes. I also sneak kale and swiss chard in his eggs at breakfast and zucchini and squash in the spaghetti sauce. We seldom eat zucchin, egg plant,i or summer squash in the winter, because store bought isn't as good as home grown.
I bet you could make an oven version of your zucchini fritters with cooking spray.

In the summer we eat a lot of salad, buy a lot of tomatoes and spinach for sandwiches too.
What ever is in season and I find fresh at the Farmers Market or Grocery.

It's hitting 70 here, and I'm melting, so I definitely try to avoid cooking lately. Salads, fruits in large quantities, and open faced sandwiches are my mainstays until the weather takes a chill pill.

Native corn and native tomatoes are my favorite summer food. I eat farm stand and farmer's market produce. I use the grill on the deck for more than half my meals.

In the winter, easily half of my meals are made in a Le Creuset enamel cast iron French oven. In the summer, I hardly ever use it other than to make BBQ sauce.
