since my dad gardens a lot, i tend to cook a lot of squash, green peppers, tomato, garden stuff

My apartment is hot to begin with, so I try to not do a lot of things in the oven. I gravitate to summer fruit more, ice tea, sandwiches, corn on the cob, cucumbers, things like that.

My favorite summer food is a sandwich made with Wonder bread and thick cucumber slices, with mayo and lots of fresh ground black pepper.

Brokencrayola, if your hot apartment has a deck, get a campstove and do your cooking outside.

Like others here, I do a lot less cooking (no baking) during the summer because the stove heats my little house.

I have iced tea at breakfast instead of coffee, and fruit salad, yogurt and muffin instead of oatmeal, sausage and grits.

I love a stuffed tomato on a bed of lettuce. I use a soup bowl, lined with green leaf lettuce. Cut the stem out of a ripe, juicy tomato and slice it down from the top into six segments (not cutting all the way through). Place the tomato onto the lettuce and spread out the sections, salt and pepper to taste. Place a generous scoop of stuffing in the middle, such as tuna salad, or this chick pea salad which I love. It's easy and cheap and consists of things like canned chick peas, onion, celery and mayo which I always have around the house. I like to leave it in the fridge for awhile for the flavors to blend. Serve with crackers to push stuff around Enjoy!

Don't use the oven much in the summer so salads are always good with pasta and without. Love cucumber sandwiches too but hold the mayo.

In the summertime the types of food I avoid are:

1. Lots of beef or pork (too heavy to eat during the summer).
2. Fried foods.
3. Too much alcohol (I hardly drink any during the summer).

I tend to eat a lot more fresh salads, fruits and roasted vegetables in summer. I keep away from stews, soups, curries etc...

Seafood and Sashimi are firm favourites any time but even more so in summer.

I cook a lot less and tend to get a lot of stuff from the deli like roasted artichokes, sun dried tomatoes, etc.. some fresh cheeses and simply have a platter of deli stuff with some lovely artisan breads. Thins like Panzanella and Pan Bagna are fab in summer as well as Tabouleh , Rice and lentil salad etc...

Meat tends to be chicken or rabbit ( much lighter) and I eat a lot of fish and seafood.

During the summer I like to make a nice fresh bruscetta, with tomatoes fresh from the garden. Add my own ingredients, sprinkle with extra virgin olive oil. Serve it on some thinly sliced lightly toasted Italian bread, and enjoy.
