Last night had sandwiches made from baby brie & super-thin honey crisp apple slices on toasted italian bread. Mmm-mmm good.

Hello everyone ! I am starting to panic now as we leave for Boston on Friday ( 11 days to my Wedding AAAAAAAAAAAAAAARGH ! ) so no cooking for me this week .

Tonight we are having a really nice ready-made Jambalaya from our lovely local supermarket. Their food is always good so I can pretend to eat home-made food without having to lift a finger. My favourite kind of cooking....

In a few days I can finally enjoy some Maine Seafood, and some wonderful American Baked Goods ! Yipheeeeeee ! Lobster here we come...

Is it a big one, or a small private one? Anyway, best of luck. Welcome back to the States and enjoy your stay. Relax and have fun - that's my advice.

Hey all, back again. Sorry I have been gone so long. We have been battling the flu here in my house for over three weeks. Haven't felt like cooking for at least that long. My poor kids are so sick of soup and sandwiches. LOL

Tonight for dinner, mac and cheese. Something nice and comforting. My middle son has a football game today barring a bad rain storm. I think this will warm him up afterwards.

Hope all is well and everyone has a great week.

I'm sorry to hear everyone's been sick at your place, MTH. Glad you're all on the mend. That mac & Cheese is a good dish for people recovering, too.

Tonight will be Chicken Divan with brown rice, leftover carrots and asparagus as sides. Wish me luck, I've never made this casserole before.

On the way home I am going to pick up a bottle of jack daniel's and some molasses.

I'm going to throw a pork tenderloin into the oven, wrapped in aluminum foil, and cook it fairly low for about 45 minutes.

Going to put that molasses and Jack in a saucepan, cook it until it's ready. I don't know what that will look like, but I'll figure it out.

After 45 minutes, I'm going to apply the sauce to the tenderloin, wrap it back up in the aluminum foil, and bake it hot for 15 minutes.

I also prepared a squash casserole yesterday w/ vidalia onions, gonna cook that too.
