I made a crock pot of chili and it's simmering away nicely here in my 5th wheel in Belfast, Maine where it's quite nippy!!!
Serving it over a baked russet potato and I'll top it with some scallions, cheddar cheese grated, and perhaps some sour cream if the chili is wicked spicy.... lol
Watching the Florida-Kentucky game in a few, having cream cheese poppers, buffalo wings with celery and blue cheese dressing, chili cheese dip with Fritos, and pizza! I love football season!
I have marinated salmon filets for three hours in grapefruit and Chardonnay (I know, it sounds weird, but it comes out fine). I am going to cook them in a pan with olive oil, aotuch of soy sauce, worcestershire sauce and diced Roma tomatoes. Parsley and scallions on top, when they are done.
With that I'll have baby carrots and snap peas sauteed in Vouvray wine, very simple and quick.
There was a nice dessert plan, but I got lazy during the afternoon (watching college football) so I am just making a fresh raspberry coulis and serve it with vanilla ice cream as I haven't baked anything (too upset watching the Miami Hurricanes going down at Virginia Tech...)
We just had fresh corn on the cob dripping with butter salt and pepper and some chips and salsa for dinner. We bought the corn from the Hutterites, the ears were a bit small but the corn was as sweet as I've ever had.
For dessert we had hot Marion berry pie with Dreyers chocolate ice cream and real whipped cream. The desert was bigger than the dinner !
Salad with bleu cheese crumbles, cheddar cheese, dried cranberries and cherries, almonds and bleu cheese dressing.
