Good morning.

Ponzu-worcestershire marinated pork chops were soooo great with the shells & peppers salad that I'm having it for lunch! That will kill all my leftovers.

DH said to me after dinner "you're a great cook" -- what more can we happy home cooks hope for?

For dinner tonight I'm thinking ham sandwiches on rye bread. Also have some brie and grapes hanging around...

Tonight is apricot chicken served over rice with balsamic roasted asparagus on the side.

Hair stylist late this afternoon, so Angus burgers for dinner. I have no clue what to have with them yet.

After all my posts, I think I'll be dubbed in here as the "chicken lady" (we eat so much chicken). I made chicken noddle soup last night out of the left over chicken that we had Sunday. I just sauteed some onion, added chicken stock, chicken, frozen vegies, a little potato and egg noodles. It came out to be a lot so it's something I may have to freeze. other than that or i'll be eating chicken noodle soup for lunch at work for a week straight!

Well the zucchini slice was pretty yummy, if I do say so myself. We had it with a nice green salad on the side dressed with balsamic vinegar and a splash of good quality olive oil.

A really simple and tasty dinner.

Couple of people mentioned they'd like the recipe so here it is:

Zucchini Slice
  • 5 eggs
  • 150g (1 cup) self-raising flour, sifted
  • 375g zucchini, grated
  • 1 large onion, finely chopped
  • 200g rindless bacon, chopped
  • 1 cup grated cheddar cheese
  • 60ml (1/4 cup) vegetable oil
  1. Preheat oven to 170°C. Grease and line a 30 x 20cm lamington pan.
  2. Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.
Because I was cooking for a vegetarian, I didn't add the bacon but instead added 12 kalamata olives and a large tomato which I chopped up.

Dinner last night was leftover veal parmesan and ziti from a VFW in Rhode Island run by italians... to die for!!!!!! Had it for lunch along with Calamari Providence style (hot peppers and juice of) and couldn't finish all the food.

Not sure what tonight will be yet... off for lunch with a friend which will consist of a BIG, FAT lobstah roll!! lol Not sure what I'll need for supper after that!

Hubby took out burgers so we will be having grilled hamburgers with baked beans, sliced tomatoes, cucumbers with suger for DH and sliced to dip in ranch for me. And of course watermelon. Got to eat it while it lasts!!

Leftover sauce w/sketti, meatballs and sausage tonight. It's the DH's b'day and that's what he wants. We may go out and get an ice cream cake at some point.

There's a lot to be said for the roasted chickens at WalMart. My gf & I were hungry one time and went and bought a chicken with some potato salad, slaw, a small bag of rolls and went in the McDonalds at WalMart, got some drinks and sat in the back corner and pigged out. Good stuff.....
