It was 44 degees here in Maine this morning. very comfortable!

I made that chicken salad with green grapes cut in half and dried cranberries....actually I found a bag of the cranberries and cherries and pecans....and added that to the chicken and I dressed it with Miracle Whip and some of the Cole Slaw dressing from the produce section.....It was a big hit!

I had my fish this week...some haddock and some clams.

If you like that...you should try curry chicken salad. Same technique except use red grapes halved, a couple teaspoons of curry powder, finely cut celery, and a couple tblspns of mango chutney.The chicken works best if it's pulled rather than cubed.

Its been a long time.....but curry chicken salad used to be a fav of mine....but the people I usually have family pot-lucks with....especially my kids) don't like curry.....so I got out of the habit of using it.....I also used to add curry to my tuna and to my egg salad.

I steamed/boiled my chicken in some broth.....and it stayed so nice and moist....the salad wasnt a bit dry......but I did chunk it up; I could pull it next time....

--slice your meat in thin strips and toss in a Ziploc bag with cornstarch.
--add all of the liquid and dried spices to your crockpot, and the peanut butter, and mix well. Add the garlic and three of the sliced green onions. If you are using fresh onion, add that now, too.
--put your meat on top, and toss gingerly to coat.


Cover and cook on low for 4-6 hours. Flank steak is thin and have very little fat, and will cook quickly. There isn't a lot of liquid in this dish, so if your crock tends to cook hot, please check it after 3 hours.

The meat is done when it is no longer pink and has reached desired tenderness. I cooked our meat in a 6qt oval Smart Pot and it was done after 4 hours on low.

Serve over steamed or fried rice, and garnish with freshly sliced green onion.
That sounds sooo good, Mookster. Definitely will have to try it.

I like the craisins, pecans and grapes in my tossed salad, too. It goes very well with raspberry vinaigrette or greek dressing. Yum.

Dinner will be the steak we didn't have last night.

Last night ended up frying some ham and an over the hill tomato (sliced) in my cast iron skillet in a little butter.

Made some grilled mozzarella sandwiches and put the ham and tomato on the inside, and topped with fresh basil leaves before cramming it all together. SO GOOD. SOOOOOO GOOOD. A claussen dill was a nice accompaniment.

We also had the rest of the garlicky green beans and mushrooms.

I'm lobbying for grilled burgers for dinner...

I am waiting to hear from my youngest son.....he and his lady friend may be coming over around supper time today or get together over the week end.....burgers were mentioned....so I best go get some beef and buns and perhaps make some potato salad....if they dont come.....I can still have that.

Mmm.. haven't had potato salad in ages. Sounds good. What do you put in yours? We do Helman's light mayo, onion, green olive, sweet gerkhins, a little pickle juice, a touch of mustard, S&P, hard boiled eggs. Yum.

Thanks to the great posters in this thread, I am never without ideas for dinner. I'm going to the produce stand for fresh vegetables and I'll decide on an entree based on what I get, but I'm leaning toward hamburgers!
