I am so over convenience foods. I put a beef roast with onions, garlic, hot chili peppers & whatsitshere sauce in the slow-cooker this morning. I'm not sure what I'll do with it yet, maybe potatoes or rice with a green vegetable on the side or sautee some vegetables and have fajitas.
1/3 c olive oil
1 garlic clove, peeled and left whole
4 slices french bread, cubed
5 handfuls baby spinach
1/2 red onion, finely sliced
juice of 1 lemon
1 tsp dijon mustard
pepper and salt
In a skillet, heat a little olive oil and saute garlic 1 minute. Discard garlic and fry croutons until they turn light brown. Remove from heat and set aside.
In a salad bowl, make the dressing with remaining oil, lemon juice, mustard, pepper and salt. Toss with spinach and onion. Sprinkle with croutons. Serves 4
I'm thinking of making Zuccinni and Yellow Squash Gisado, with stewed tomatoes, herbs and sprinkle of cheddar cheese.
Need to eliminate some items from the garden. Quick easy and Yummy.
I am not sure.....I am having a gin and ginger at the moment...I am not all that hungry...but will probably have something....."What?" is the question. It would be a good night for pizza...but after my cocktail....not going out on the road. I will see whats easy and in the freezer....
Oh there are some french fries and haddock fish sticks; I also have some B&M baked beans, that might be it for this evening. I will even make some home made tartar sauce. I love it when a plan comes together.
