We're going to a nice Italian place thanks to our neighbors. We did them a couple of favors so they're treating. Never been to this one, but I hear it's really good. Can't wait!
Bean burritos - I've created a monster I love tacos and had the thought some weeks ago that the burritos I enjoyed at my local taco place would be even easier to make. And they're really good
The secret is the beans. I make a version of "refried" beans that are fat free yet very tasty. Take a m/w safe bowl and add a tsp of dried minced onion. Then pour in a can of pinto beans, cover with some plastic and microwave on high for about 4 minutes, adjusting for your oven power. (Use hot pad or mitts to remove the hot bowl). Take a suitable masher and mash up the beans leaving some beany bits - not too smooth. I put the beans in a mini crock pot for serving. You may add a bit of salt to taste, but take care. These beans have a rich flavor by themselves.
Place a couple of flour tortillas on a m/w safe plate and microwave for 30 seconds. On each tortilla add a small row of fresh grated cheese and top that with a big spoonful of beans. Fold and wrap and flip. Add your favorite toppings. I have used, so far, black bean and corn salsa, and some hot green chili sauce. I want to try these with more different sauces, and experiment with jalapenos and cheese on the outside
