going to grill salmon steak~ mac and cheese~fresh green beans

got lasy today~ maybe make potato salad tommorow~ maybe tile top of table instead!

Hi all. So many tasty dinners tonight.

Mookster- Thank you so much for the Mongolian Beef recipe. It has been copied and saved.

Newdaawn- I love combining dried cranberries and walnuts. It is also very good in a green salad with light Ranch dressing. Yum.

I made my own version of Amber's Tomato Soup with White Beans and Bacon. It is delicious and I will have some for dinner. Hubby isn't feeling too well so it is his choice. He will most likely have pancakes.

Ah sweetie, I am so sorry it is so darn hot there! It is just that time of year, sigh.....
I probably would skip eating in those temps!!

Ramen soup. I woke up at 6 p.m. and have to leave at 7 to get to work. About the time I could get anything else cooked, I wouldn't have time to eat it.

Well, the steak was great. I love a good, thick piece of steak broiled (I love it even more grilled, but it was too hot/threatening rain) to perfection, and that's what we had. Sides included fresh steamed green beans, cauliflower, and I made a casserole type thing w/zucchini, yellow summer squash, onion, red pepper, butter, S&P and freshly grated parmesan. I think it would have been really good if I hadn't thrown some oregano on it. It just put it over the top, IMO.

Turkey cutlets tonight. Pounded a bit, lightly breaded & pan-fried. With grilled asparagus - my favourite way to do asparagus now. Might do potatoes as well, or go light and do a tomato salad, not sure yet.

Last night's Tequila Lime Prawns turned out great. Had them on Cilantro-Lime rice which I'd tried for the first time, and was a success. Very tasty. Just a bit of onion and garlic and lime zest in a pan, then the rice, lime juice, splash of white wine and a couple cups of water mixed with a bit of chicken stock. Sort of like a risotto. Hubby went back and finished all the rice afterwards.
