Friends of ours will be out of the country in November, so today we had Thanksgiving Day dinner in September.

We had the works: turkey, giblet dressing, stuffing, mashed potatoes, green beans, rolls, cranberry sauce and cherry cobbler.

It really filled teh thanksgiving day dinner shaped hole in my stomach. I hope it I have room in November.

I can't believe I forgot the cerveza

The green chilies I used today were from a farmers market, and I roasted them at home. When fresh chilies aren't in season I cheat and use the canned ones. (if your grocery store doesn't sell the big cans, you can usually find them at a restaurant supply store)

Here's the recipe:
  • 3 lbs pork shoulder
  • 3 cloves garlic, minced
  • 1 tablespoon salt
  • 1/4 teaspoon ground oregano
  • 1/2 tablespoon coarse black pepper
  • 2 cups chicken broth
  • 2 lbs fresh green chilies, roasted and peeled
  • 2-3 jalapenos, roasted and peeled
  • 1/4 cup corn starch
  1. Cut pork in 1 inch cubes.
  2. Put pork in saucepot; simmer, uncovered, until meat is tender.
  3. Add all ingredients except corn starch.
  4. Mix well.
  5. Bring to boil; reduce heat; cover and simmer for 1-2 hours.
  6. Stir occasionally.
  7. Before serving, mix corn starch with water and then stir into chili to thicken it.
  8. Note: may add potatoes, or use other pork roast.
  9. note: may transfer to crock pot also.

You can use the food coloring if you like, but its better if you just let the pork sit out on the counter for a few weeks until it turns green on its own.
