I have tried meatloaf with ground turkey, didn't like the texture at all, but never thought of adding turkey sausage. I might try that next time I make meat loaf. When I make Lasagna I do not use low fat cheese, I do use veggies, and no meat. As for the salt free, nope: if I am cutting out most or all the fat, I will need some salt to give it flavor. I guess it depends on how much flavor you are used to eating or should I say, how spicey you like your food. Some people prefer food on the bland side.
