This thread is making me hungry for some fresh taquitos (rolled tacos) with guacamole, hot sauce and cotilla cheese sprinkled on and I don't care whose guacamole recipe I use. They all are really good if good avocados are used. I also like trying different recipes once in a while instead of the usual same ol same ol.

Avocados, tomato, lemon or lime juice, minced garlic, salt, pepper and a few drops of Tabasco. I usually mash it with a fork or potato masher, but if I'm making a bunch I'll put it in the food processor, but stop processing while it's still got some chunks in it.

I knew I screwed up the minute I posted that. Yes , I've seen mention of Mayo and Miracle Whip maybe... Now I'll admit we've had salads with Avocado in it and using Ranch dressing. But, avocado should be enjoyed with as little addition as possible. It is good to try all these different ideas. Finding a great avocado is the toughest part. Avocados on the half shell mashed and replaced in half skin with Real bacon bits ...yummy!!

Lol, what I meant was he slices them, and then drowns it in Ranch -blech!- Thats just not right, how can he even taste the avocado?

I made it for the first time last night for regular Friday night house guests. Mine was very simple, 3 avocados, 1 roma tomato, handful of cilantro, diced jalapenos, green onions and salt and pepper. Tell me what other ingredients you use. Some recommended regular onions but I prefer the flavor and the color for this purpose of green onions...I got rave reviews...it was so good.
I also use these ingredients, with the exception of the green onions. I typically use red, but I'm going to try the green. Thanks for the tip!

IMO you can't go wrong with avocado. I add it as a topping to quinoa and beans, salads, soups, sandwiches, etc. My boys like grilled avocado sandwiches - like grilled cheese without the cheese.

All you purists wouldn't like my guacamole, but I get raves and recipe requests every time I serve it.

Avocado
Diced tomatoes
Diced onions
Lemon juice
Minced or grated fresh garlic
Salt
and my secret ingredient. . .

a dash or two of steak sauce.

Trust me on this. It's to die for. Mmmmmmm.

I can believe the steak sauce with just a dash, not much different than the hot sauce...will have to try that one for the heck of it
