My brother & I are trying to remember a recipe our mom used to make: Ham Croquettes. If we can get it right (I remember ground ham, onion, cracker crumbs, an egg, parsley. Anything else?) we'll serve it with mashed potatoes and a vegetable medley.

I go to www.allrecipes.com - it is a great site. That is where I found my sweet potatoe salad recipe because I wanted something yummy without mayo.

I did & couldn't find one that looked like mom's. Most had a cream sauce to bind & these things are not the healthiest with out that, too! (When they fall apart in the pan, maybe I'll wish I had! )

Everyone's menu sounds wonderful!

Mpope - If you have the desire to share your Parmesan crispy recipe, I'd love to hear it. Sounds yummy. Or better yet, can I come over?!

I don't eat half of it, but for mom, I'll make her favorites:

Appetizer: Artichoke, black bean, red pepper salad
Main course: Chateaubriand, Caesar salad, asparagus
Dessert: Creme brulee, port wine
Snack: Baked camembert with almonds & hazlenuts
Afterwards: 4-hrs on the Nordic Track. Well, that's what she'll be doing. I'll be watching a movie...
