I received a 50lb bag of potatoes (white, from Maine) and a gag gift. Trying to figure out what to do...and I think making bags of fries is it.

I have heard the two best ways to freeze potatoes for fries are blanching or a quick fry...then freezing.

Looking for opinions one way or another.

Or...everyone is invited over for a big serving of mashed with gravy!

The only ways I would attempt to freeze them are mashed or in some sort of caserole.

Potatoes dont seem to freeze well in household freezers and I have not yet found a way to prep them to make them freeze well. Definitely dont freeze mashed. They will taste very strange when they thaw, all dry.

But you can freeze WHOLE potatoes but if you do, DO NOT thaw them before use. Cut and peel, wash....whatever and then cook. Dont thaw or they will get mushy.

Luckily potatoes store very well in a cool dark place like any bottom cupboard or in a pantry. If you have a family that throws lots of holiday parties, make a potato dish for each one! You'll use them up in no time.

Maybe you could donate some to a local food pantry? Some will take fresh foods, although many will not.

We go through a lot of potatoes (at least 5lbs a week, more with the kids home from college). We eat them almost every day, but 50 lbs, wow.

Yeah is was one of those huge paper bags. I had one today and they are really good!

I think I am going to follow the advice and just eat them. I have a nice cool dry basement.

If you have a dry basement, lay newspaper down on the floor and lay them out in single layers on the floor. We grow our own and they keep all winter.
