Do I have to pick just one?? It really depends on what the cheese is accompanying... for example:
Crackers, quesadillas, or (turkey) burgers = Sharp cheddar
Plain breads = Brie
Cold cuts or grilled cheese sandwiches = Swiss
Salads or pizza = Goat cheese, feta
Munching straight off the wedge, with or without wine = Aged gouda
Gorgonzola, brie, blue cheese, pepper jack, sharp cheddar,goat, gouda and the list goes on.
I purchase the majority of my cheese at a grocery store chain called Wegman's. It has an incredible cheese selection for not being a cheese specific retail store
Just plain Colby for me. My Dad loved Limburger. Nasty stuff.

My favorite is probably Muenster, followed by Gruyere. Muenster is very mild, and melts as well as mozarella on pizza.
Can't forget melted Swiss for Rueben sandwiches too.
