Braeburn usually never lets me down. Firm, crisp, and a good combo of sweet and tart...I like apples that taste like cider, not artificial apple flavoring (the bland and mealy Red Delicious is a big offender, there...like a mouthful of weakly apple-flavored sand).
I used to live near an orchard that specialized in Jonamacs, a Jonathan-McIntosh hybrid. Deliciously tart and good bite. Roxbury Russet is a really, really old heirloom apple that makes AWESOME cider, but you generally have to find a speciality heirloom grower at a farmer's market; you don't see it sold commercially because they're really mottled, not brightly colored, and not that attractive, and they're not so much eating apples as cider apples. But they're heavenly.
Arkansas Black are tart and yummy, and beautiful to look at, they're a deep, deep red.
Just had a golden delicious. Not as good as the others. Its very similar to a McIntosh (which I voted for, but I dont think highly of it anymore).
