Chicken artichoke sausages (DH says "yum" in a VERY sarcastic manner), baked beans and 3 bean salad.
It had not occurred to me before that I'm a little heavy in the legume dept., but tomorrow's another day.

As usual, I see some delicious dinners on here! Okay, I am rather proud of myself. I went by a friend's and saw some Christmas pictures of the gang. Now, I have lost some "poundage" since then, but I haven't attacked the diet like I should. This winter was just too perfect for comfort food deluxe! As I'm looking at the pictures, I'm thinking, "sheesh, it's less than three months until the pool opens."

So I bypassed all of the takeout, including the yummy fried chicken at the grocery store, and quickly cooked the following. First I pan fried some chicken tenders in the non stick skillet with a tiny bit of olive oil. Next I stir fried some mushrooms and green onions and topped the chicken with them. There was enough of the rice dish left from Wednesday and I steamed some broccoli. I did not eat any of the bread that I dearly love! Later on, I will have some strawberry shortcake. Yum, these Florida strawberries are so fresh and sweet. I had to nibble a few for quality control.
