Last night's dinner ended up being Grilled chicken sausages (some spicy and some sweet basil) with asparagus. DH had some bread too. Tacos moved to tonight!
I put the asparagus in a big zip-lock with oil, garlic, juice of half a lemon. After marinating a little while, I make a foil packet, put in the veg and seal it tight, and throw it on the grill for 7-10 minutes.
I am trying to follow this insulin resistance diet where you watch your carbs a lot - you can't have more than 2 servings in 2 hours - so I had zero with dinner last night so I could have a bowl of popcorn with my DVD. Compromises.
