Made a pot of potato soup had crackers and Italian bread with it. Jello for dessert.

I am enjoying another cup of coffee after my delicious "brinner". (Thanks again, Lisa, for the new word!). Pancake houses, eat your hearts out! I topped the pancakes with this pineapple mixture I made last night to go over some vanilla ice cream. To a large can of pineapple tidbits I didn't use at Christmas I added some brown sugar, cinnamon, nutmeg, vanilla, a little juice from the tidbits and a little orange juice. I warmed this up on the stove, let it simmer very gently a little bit and thickened it with some cornstarch. There was enough left for the pancakes, so I varied from my planned Bananas Foster type topping (courtesy of another poster), heated this up again and added some sliced bananas at the last minute. Along with this were the Bacon Rollups (recipe posted on the recipe subforum), coffee and orange juice.

Just want to tell everyone on the food forum what great new friends each and everyone of you are. Who knows -- maybe one day we can get together and write a cookbook. We certainly have the cooks and talent to do so.

My FAVORITE pasta dish (it replaced lasagna...which has ALWAYS been my fave)

Whole-grain noodles
Melted cream cheese w/ milk
Bacon
Spinach
Garlic Powder


Basically you melt the cream cheese and mix it with milk. You also mix in SOME of the grease from the bacon.
You add the spinach to that.
You mix it with noodles and put bacon on the top.

DELICIOUS!!

My mom was going to make baked spaghetti but I am SOOOO glad she changed her mind!!

We actually have in our thread an accomplished cookbook author in kelsie here.
