Some chicken thigh and leg quarters, slow cooked on the grill...slathered some BBQ sauce on....and some garlic-herb seasoned rice...tomorrow is the big day celebration at our house....

Mexcian Lasagne (great for breakfast too)

Enchilada sauce on the bottom, one layer of corn tortillas, one layer of scrambled eggs, chili, cheese, and dollups of ricotta chese, another layyer of corn tortillas, another layer of eggs, chili, etc., top it off with enchilada sauce and bake. Add cheese on top and bake until the cheese is melted and serve. Top with cilantro and onions and/or salsa.

traveling and stopped to have a Chicken Fajita salad, a bowl of chips and some hot sauce and all washed down with a nice cold sweet tea.

Chinese new year~ so had Chinese at a stand at the show at the Chinese Cultural Center!

Had a "plumbing surprise" this afternoon -- numerous tiny leaks in the basement. Ugh! The water is cut off completely right now. I don't know what the plumbing bill will be so I cut back on Valentine's steak dinner to a homey menu but it was still good. Meatloaf (first one since Christmas), parslied carrots, salad and delicious fresh bread from the grocery bakery, plus red velvet cake.

Howdy not been online much this weekend hope y'all had a nice VD today.

I made some chicken fajitas with onions & peppers, guacamole only forgot to make some refried beans. But it was all good even without the beans tonight. Peanut butter pie for dessert.

I had leftover prime rib slices with homemade gravy, a small green salad, a side of rice and iced tea. Thinking of a little dish of ice cream for dessert later.

Well we went out. Wife had all you can eat fish..daughter had fish also. Cheese soup appetizers and I had a Mexican plate.
