Hey C-D'ers, looking for advice on what would be a good salad to serve with roast pork? Its our Dinners for Eight tomorrow and I've been assigned the salad. I'd like it to be a salad that's a little more than ordinary as we always try to do up something special on these nights.

It will be a roast pork with apple sauce and roast squash and potatoes.

Any ideas, please?

Well I recently had something like this which was just delicious and I think would go well with roast pork....

Mandarin Cranberry Salad

That's not the exact recipe though...I keep forgetting to get it from the host of the evening.

Oh I should add that the version I had also had baby spinach leaves in it.

Or a version of Waldorf Salad might be nice.

Thanks moonshadow! You've given me some great ideas to work from. I was thinking about having some sort of fruit ingredient in there. I do have dried cranberries and I could probably substitute oranges for the mandarins. And the Waldorf Salad idea is another good idea. Hmmm, yes, I'm inspired now, thanks!

No worries.

I sometimes get stuck on this stuff myself and need a little inspiration.

NOT that I ever follow a recipe exactly.

I'm still trying to get my hands on this AWESOME salad my cousin makes with peanut sauce for dressing but so far she's elluded me.

lettuce, radicchio,carrots, apples, cranberries, walnuts in a mustard vinegrette....

Mmmm, more inspiration. I wonder if I could substitute the radicchio with some cabbage as I know that one of our 8 hates radicchio?? Is lettuce and cabbage mixed together in a salad okay?

lettuce and red cabbage is mixed all the time, so why not? mixed greens would work well too for those toppings. I'd prefer spinach leaves.

I usually serve this with my babybacks

1lb Smoked Bacon
1 head of Cauliflower
1 bag of Mixed Salad greens with Lettuce
Some Sugar and Mayo

fry bacon until crisp after it cools chop into small pieces
and set aside, Cut the Cauliflower and run the pieces over
a grader. Pour lettuce into a big mixing bowl pour in Cauliflower, Bacon add Mayo & Sugar to liking chill 30min
and gently fold before serving

Broccoli and Cauliflower Salad

1 head of cauliflower, small bag of broccoli
lb. bacon
1 cup of miracle whip salad dressing
cup of sugar
2 or 3 tbls. of apple cider vinagar
1 cup of shredded cheese
cup of nuts or any kind of
raisins. Cut broccoli and cauliflower in bite size pieces, add bacon and cheese,raisins mix salad dressing ,sugar and vinegar together, pour into bowl and mix together with cauliflower and broccoli, put in refrigerator about an hour before serving. very good and healthy. You can add other things if you want.

I like the idea of something with dried cranberries or pomegranate seeds to give a little tang to the pork and potatoes. Or maybe field greens with diced pears and pecans.
