So I decided to make twiced baked potatoes the other night for a kobe steak. I was wandering the isles at Whole Foods thinking of a plan, then it came to me. Twice baked potatoes with creme fraiche, blue cheese and pancetta.
I hollowed out the potatoes and roasted them. I took the roasted potato pieces and mashed them with the creme fraiche and used a tiny amount of Maytag blue cheese (just enough to flavor them.) I also added a generous amount of crispy/chewy rendered pancetta.
Meat is an acceptable garnish.
I am in a potato phase and would like to hear your variations on twice baked potatoes.
