I asked my SO to pick up a container of peeled garlic from Costco and when he got home I realized the expiration date was a week away. I thought it was in olive oil and lasted for a few months but it's not in oil. I called Costco and they didn't know how to make it last longer and just said I can return it. I called the company that sells to Costco and they didn't know but guessed it would last longer than the expiration date. I researched on the internet and to freeze it seems like more work than I want to put into it.

Can I just pour olive oil in the container and will that make it last longer in the fridge?

I would return it unless you use major amounts daily. Someone gave me a jar of those and shortly after they were mold.

You could puree with olive oil and salt, and that would keep for a while, then freeze leftovers in weeny cubes if enough left...

Or... just buy normal garlic in heads/bulbs - buy it good and fresh, and keep dry and cool - keeps well enough use for several weeks, if not months!

Sam's Club, Wal-mart and our local grocer all have the minced garlic in a jar. It's great and lasts a long time in the fridge!!!

That was the point of buying it already peeled, not having to do a bunch of work.

I know, that's what I usually buy but I prefer it sliced. This is why I told him to pick up the peeled, so I could slice it as I use it.

Like I said, I thought it sat in olive oil like the minced but it's not in any type of liquid. Does anyone know if I fill it with olive oil...will that preserve it?

I agree with Lacey, just bring it back. I bought that a couple of years ago, covered in oo and put in the fridge within a few wks. it was filled with mold. I will never buy it again, I just buy a few heads of garlic and peel and use what I need.

You can store it in olive oil, in the fridge, but only for a couple of weeks. Any more and you might brew up a batch of botulism! You can also store them in oil, in the freezer, for a couple of months. To me, that seems like more trouble than peeling them.
