seaweed is bitter? I always thought it was kinda sweet - certainly not bitter. Anybody else think the same way as crayola or am I the odd one out? Nothing against you crayola - just curious what others thing!
I thought seaweed was neither sweet nor salty nor bitter - isn't it 'umami' that other (the fifth) taste that we all love, sort of savory depth like you find in chicken stock, anchovies, Marmite, soy sauce.....
Anyway, I think that's what I love about sushi, plus textures like creamy fresh tuna, mmmmmmm

I live in a very small town and there simply are no sushi bars anywhere near here. Despite that on 2 different trips, many years apart I tried sushi. I know nothing about sushi and from tv it looks like there are many different types. Both time I had sushi with a tiny amount of raw fish in the middle, rice around that and then wrapped in seaweed. I am not big on bitter tasting things, si I did not like it as the seaweed was very bitter. I would be open to trying other things besides that if the opportunity ever arises though.
The kind of seaweed used to wrap sushi isn't actually bitter. It's called nori pronounced noh-ree, and it's actually rather sweet and salty. It's possible that you were tasting the vinegar with which sushi rice is always made.
Have you tried sashimi (pronounced sah-SHEE-mee)? It's small slices of fish with no seaweed and no rice.
Or Nigiri sushi (NEE-[hard g as in gain or give]gee-ree). That's rice topped with a slice of fish or vegetables, usually with no seaweed.
Probably every sushi restaurant also has nigiri sushi and sashimi.
I absolutely love sushi. My daughter wanted it for her birthday dinner on Friday night so I made heaps for her. In our place we eat it smothered with Kecap Manis. Yumm
no. I don't like fish to begin with. but I do like my meat rare!
