Default Quick thaw of phyllo dough - HELP!!

So I'm an idiot and completely forgot to take my frozen phyllo dough down to the refrigerator to thaw overnight. Tonight is mine and my husband's anniversary and I'm making his favorite chipotle chicken rolls - and he will be CRUSHED if I don't make them!

Any way to do a quick thaw? I read tons of places to NOT microwave it, but then I just found an Alton Brown video where he says to thaw it in the microwave on high for 60 seconds. He said it's actually better than fridge de-thaw.

Any insight? I appreciate the help!

Ditto on trust Alton. You can also defrost by leaving on the counter for about 30-45 minutes.

Phyllo dough is very delicate and I would probably wrap it in damp paper towels while defrosting it in the microwave. I would love to see that yummy recipe too! Will you share it with us???

Success, friends! Alton came thru for me. I microwaved the phyllo still in its plastic wrapper for about 30 seconds and it came out perfectly. Woo hoo!
