Chicken Mole - so absolutely divine! Not many restaurants make it from scratch so it has been ages since it has graced my taste buds.

Mine: Poblano Cream Soup.

Husband: Pork with Green Chile.

Both homemade from fresh roasted chiles, of course!

Sadly, I will soon be moving back to Little Rock which is dismal as far as Mexican food goes. At least it was when I left in 2007.

Chiles rellenos, caldo de camaron, mixiotes, tacos dorados, enchiladas, tamales, sopes, pipian, and elote with mayonaise, lemon juice, chiltepin powder, and queso cotija.

Or a nice sizzling molcajete with chicken, steak, chorizo, jalapeno, nopales, queso fresco, and pico de gallo. And horchata for my beverage.

And liberal amounts of salsa de chile de arbol.

Pretty much anything that's fresh and not drowned in cheese. I'm probably most fond of Oaxacan and Veracruzana regional cuisine.

Huachinango Veracruzana
Polpe en chipotle
Chilaquiles verdes with a fried egg on top
Tlayudas - beef, chicken, chorizo or chapulines
Pretty much any mole
