Next time I go to the beach I'm stopping and getting a real buffalo steak at the specialty market I go by. I know the buffalo hot dogs are awesome.

That's cause its sausage. They add flavor while making it. My guess is horse meat would probably be as bland if not more so than bison because horses have never been bred for meat production and thus probably have very lean meat. Fat is where flavor is. Horsemeat probably gained a reputation as delicacy because historically only someone very rich could afford to buy a horse just to eat it.

Bring in predators. Alaska could spare some grizzlies and wolves. We could help the jaguars return to the US by bringing some in as well. We could import some Asian lions from India and turn them loose too which would also have the benefit of making that species more likely to survive. Right now wild horses in the US face almost no predation because mountain lions have a very hard time killing a healthy adult horse. The above mentioned animals would not. Plus with the government trying to bring California condors back everywhere in their artificially extended range from the 1800s they need the horse carcasses to eat which they don't get when the BLM kills the horses.
