I'm going to grill burgers Mexican-like style (guacomole and homemade salsa with ranch dressing), either eat the rest of last night's potato salad or make sweet potato fries, and make a tomato, onion, and cucumber salad with red wine vinegar.

I got about 40 tomatoes to freeze or make sauces out of them!

I'm going to scramble some eggs with some hatch chiles, then wrap them up in hatch chile flour tortillas and hit them with a little salsa.

Green salad with sweet onion, mushroom, croutons, bacos, and hidden valley ranch. I'm having a craving.

Oh, I almost forgot - doesn't sound like it goes with the above but DH wants french toast from the 2 day old french bread, so I'm making that too.

Cube steak, roasted red potatoes with chives, corn and sliced tomatoes. Kids have goine back to my sons house and tomorrow they are going in a boat on the lake to play (to hot for me) and tomorrow night a family BBQ which we will be at! Boy am I out of shape! I'm still so tired but of course it's been like a steam room here and that gets me tired too.

Plans have changed - DH is bringing home a smoked boston butt from our fav BBQ place here. Yay! All I have to do is heat up some side dishes!

(BTW - any ideas on how to cook these bone-in country style ribs is appreciated. I am thinking low and slow in the oven - anyone who has had good results this way please give me details!)

Chicken breasts marinated in olive oil, little bit of OJ, soy sauce, minced garlic and black pepper tossed on the grill, then when almost done a light brushing of BBQ sauce, rice, steamed broccoli and cauliflower with squirt of lemon juice, a few grinds of pepper and some cheese tossed on to melt, and some fresh pineapple slices on the grill with a couple left over for a-top ice cream later with a light homemade caramel sauce
