I still have some tater salad left over from Monday (I always make way too much!). I use small red potatoes (chunks) and chopped hard-boiled eggs, a small amount of mild onion, and sometimes chopped celery. Dressing is mayo, mustard, celery seed, vinegar, salt and pepper, and a tiny amount of sugar. I always sprinkle a little paprika on top to make it look pretty - only because that's the way my mom did it.

red taters, skin on, lots of hardboiled eggs, mayo, purple onion, bacon, sour cream, sweet pickles. I don't make it the same 2 times in a row. LOL

Those that add vinegar ~~ how much and what kind? Do you add sugar also?

NO celery for me, I'm not crazy about the taste or crunch. BLEC

Either way for me I often use leftover mashed potatoes to make potatoe salad. My Grandmother also did this and if she had some leftover peas she added them also. It was quite good.

Chunky. Chunks of hard boiled eggs (cut up real small), onion, celery, mayo, mustard, relish, and black olives (cut up real small too).

But I eat it on Thanksgiving and Christmas only, as it is kind of fattening.

In Eastern Europe, I got addicted to Russian Salad. Made with mashed potatoes, and cooked veggies like carrots, beets and peas (which can be canned). With mayo, mustard and paprika. And anything else you want to put in.

I'm like you, nan - I never make it the same way twice. When I put vinegar in, I just eyeball it. Probably about 2 tablespoons in a big bowl of tater salad. Same thing with sugar; probably only a teaspoon. Just a little something to balance out the vinegar and thin the dressing so it mixes better with the potatoes and eggs. I don't always use celery. If I don't, sometimes I'll put celery seed in the dressing.

Chunky, and the potatoes just fork-tender, not overcooked.

Eggs, mayo, celery, and onion.

Another version I make has an oil and vinegar dressing, with onion, celery and fresh tarragon.
