I lived in Ft. Lauderdale for 24 yrs. (Miss it terribly). I'll have to agree with ZonaZoo. Sure, there's other things to do, but you can shop and eat in lots of other cities in the U.S. If you don't like the beach why go to So. FL?

A fun thing I would do when people would visit me was to take them for a little road trip out to Schnebly winery outside of Homestead. It's a beautiful little winery that makes its product out of tropical fruits. You can do a wine tasting at the bar or buy a bottle to enjoy while sitting out by the pond/waterfall and feed the fish. They claim to be the southern most winery in the continental U.S. And it's nowhere near the beach.
After visiting Schnebly it was generally time for a little dinner so I would take them a little farther south to Alabama Jacks (about 30-45 minute drive) which is just before Key Largo on Card Sound road.
It made for a pretty long day (I was in the Ft Lauderdale/Hollywood area) so make sure the non-beach goers are good road trippers.

There's plenty of zoos within the tri-county area.

There's performing arts centers.

There's plenty of Casinos and some horse/dog tracks.

A few museums.

Tons of places to shop. Plenty of malls.

Restaurants galore. Every kind you can imagine. Same with the nightlife.

There's Everglade tours.

Seaquariums.
