Stan's in Bonita has decent subs. It's not horrible down there because some transplants have set up shop but there is nothing southern about the place, that's for sure. I suspect that the more northeasterners that show up, the better the food will get.

BBQ is like pizza - a ton of variation and as much passion. Nothin' like the vinegary goodness of North Carolina's. But, until I had that, I thought it was all sticky and sweet and out of a bottle....

As far as Philadelphia steak sandwiches, I'm a veteran - worked my way through my first year at Temple University behind a grill. The essential elements are:
  1. The roll - must, must, must be Amoroso's.
  2. The meat - thinly sliced rib eye steak finely, finely chopped during the cooking process just like you see the guys at hibachi do it.
  3. American cheese - NOT Cheese Whiz as some would have you think.
It's really not that difficult yet it's screwed up over and over. I don't know why someone doesn't arrange to have the rolls flown down on the daily PHL > RSW runs. In theory, they'd make a killing.

I was a chef for 15 years before giving it up. Cooking is my passion and as long as I can get the ingredients I will be able to make my Sunday gravy and meatballs that will make my day. What I can't duplicate is the "great" water we have here in NJ and PA that makes the great bread and pizza dough. Barbeque I have been with Texas they have some of the most awesome BBQ I have ever had. I will miss the Amish markets that we have here for meats and poultry. Are there places for us transplants that other Philly area people have opened in or around C/C? And if so I would apprreciate names if possible. Also how about Italian market stores for cheeses and meats any around I would appreciate that also. I could be like a bootlegger and run cheese steaks south lol.

You'll be fine at Paesano's. Not as great as DiBruno's on 9th Street, but close.

That's what northerners do. (Cook the stuff in sauce. Usually from a bootle. yuck!)

Your best bet is to find a couple of guys on the side of the road with a smoker. Maybe Dunbar, but maybe not. In the real South, they are all over the place. The stuff is amazing.

Real local delicacies would be a native making you some snook or gator.
