I would consider Weatherford area. I live in Rhome area currently and love it but, I think from everything you said I would look out West first.

I just read your post, I am not sure if you have already moved here or not, but Cleburne is south of Ft Worth bout 30 min. and it is great for horses and families. Rio Vista is as well, more country than Cleburne and way smaller town, everyone know everyone.. i hope i can help in some way

Weatherford is nice but I would look at Granbury, Burleson, and Grandview.
