Did you considered installing solar panels? You can get back 30% of the cost from the federal government Department of Energy - Tax Breaks. You probably can also get other rebates from your utility or local government.

Default Buy a big Freezer

I bought a big upright freezer years ago and it's paid for itself over and over again.
I only cook once a month or, sometimes, in the summer, once every two months. I'll have a great long cookout one day, double-triple-quadruple some favorite recipes, put most of it into freezer containers with the name of dish and the date I cooked it, and into the freezer it goes. I will oftentimes make up 6 or 7 different dishes, so I'll have 6-7 choices over the next month or two.
How many times do you run into great baragins in the grocery store, but you don't have the freezer space to hold it all? A big freezer is the way to go.
