After taking on a small communial garden plot this summer we decided to grow zucchinis along with a variety of peppers,tomatoes various beans and peas etc., trouble is we now have several dozens of zucchini that are going to rot before we can eat them all,any one got any ideas or recipes that are heavy on zucchini usage?
I love to use zuchinni along with other garden veggies to roast on the grill:
Slice zuchinni, yellow summer squash, red onion, quarter red potatoes, add green/red and or yellow pepper wedges. Stir together. Drizzle a couple of TBS of olive oil and sprinkle Mrs. Dash to taste, stire again. Wrap in foil (seal well so it doesn't come apart) and place on medium grill. Steam/roast until they begin to smell done.
I like cutting a small one up into pieces and just adding it into spaghetti sauce. Zucchini bread is also awesome. Or steam them with onions and tomatoes as a side dish.
But if you have that many, why not find a local food bank or shelter and give some to them?

Well if you were here our church food bank would love to have them, but being that won't work, one think I do: I make zucchini relish. It is yummy. You also can grate it and freeze it. Yes, it will get a little water logged, but you can squeeze the water out and use it in soups, breads, etc. Of course there is always the old famous z. bread. I have a great recipe for Z almond bread. It has won a couple of blue ribbons at a county fair.
Oh and old and favorite z cassarole.

I dehyrate and freeze alot of zukes. We put dehyrdated zukes in soups, spaghetti sauce, grind them down for vegetable dips, etc. With the use of food banks at an all time high, food banks will be happy to take any produce.
