These are all great suggestions - I really appreciate it! I am still having a hard time deciding and will have to do some window shopping at the nursery for all the items suggested. I am also thinking about narrowing my pathway b/c I feel like it is a bit too wide and not really fitting the aesthetic I was going for, so that will help with the labor and cost involved in planting things. The only issue I see with planting things between the pavers is this pathway also acts sort of like a drainage ditch, as all the water from our back side yard ends up flowing down it around our house into our run off "valley". Will have to check things out and see what will work best.

Wow, I think we have very similar issues. Ours is pretty much the same way. It is sloped to have rain water run into a drainage so I am curious to see how the mondo grass does. I planted 2 or 3 in between each large step rock and I hope the massive downpours (not that we get much rain but when we do, they normally aren't very "gentle" storms) don't kill them.
