If the highest rated solar panel is at 11v, I would require a diode that would regulate the direction of current flow rated to at least 11v (above is better?).

Most diodes are rated for different voltages it does not matter if the voltage rating is higher than your actual voltage (it is the breakdown voltage in the reverse direction)
